Eggxer- mixed eggs in the shell

I have a great passion for making healthy food, fun for kids.

I am also a vegetarian and a big fan of hard boiled eggs but I was always bothered by the “smooshy” texture of the yolk. In the end, what really triggered me to find another way to eat eggs, were my kids who refused to eat the egg yolk.

 

The egg is the most accessible nutrient-dense food and is defined as a “Super-Food” critical for children's body development. The yolk contains 99% of the eggs’ nutritional value. Among the others, the yolk contains B-complex Vitamin Choline, which is a essential nutrient for brain development and is associated with better neurological function and reduced inflammation (just Google ‘egg super food for kids’ and you get the scope).

 

When I made my first eggs scrambled in the shell and brought it to my kids for their verdict, I was amazed. They ate them all and asked for more. I never had mt home ben so full of my kids’ friends, followed by their parents coming over to see the “magic” of their kids eating the whole egg with passion. The parents also tasted the new egg, loved it and came up with great ideas for some cool serving options.

 

Talking to the parents, I discovered that most of them had the same problem, but thought it was only their kids and never discussed it socially, so the fact that very many kids don’t eat the yolk is one of the “best kept secrets” in the world.

 

For evaluating the size of this problem, we ran surveys in the US, Canada and Israel. The results showed that a over one third of the kids don’t eat the egg yolk. In the surveys, we also presented the “in-the-shell” scrambled egg, and the level of acceptance was, the vast majority. We also ran focus groups in Canada and egg tastings in family-events in Israel. All kids and adults alike showed the same amazement and excitement about the new egg.

Bottom line,

my own kids’ aversion to egg yolks, introduced me to the global nature of the phenomena, and in the end, acted as the trigger to commercialize my invention.
